Turkish coffee is a traditional method of brewing coffee that's rich, strong, and full of flavor. Turkish coffee is made from very finely ground coffee beans, almost like a powder. The coffee is combined with cold water and sugar (if desired) in a special pot called a cezve or ibrik. The amount of sugar can be adjusted according to taste. The mixture is heated slowly over low heat. It's important to avoid stirring once the coffee is on the stove. As it heats, a foam forms on top, and just before it boils, the coffee is removed from the heat. The coffee is poured into small cups, and the grounds are allowed to settle at the bottom. The thick, unfiltered grounds give Turkish coffee its unique texture and strong flavor.
A fun tradition is to interpret the coffee grounds left in the bottom of the cup, known as tasseography or coffee fortune telling.
