Family and Filipino Classics

This very aromatic and savory lumpia wrapped in bean curd skin is an example of how Filipino's are constantly evolving food. Pork tenderloin is marinated overnight then mixed with shrimp and vegetables and steamed in bean curd skin before being deep fried to a crisp. Recommended sauce: sweet, sour, spicy.
- Ate Pong's Dynamite (3 Lumpia Per Order)$4.00My cousin always looked after me on visits home. On a recent visit she introduced me to the dynamite egg roll and was kind enough to share her recipe. Roasted serrano pepper stuffed with Beecher's cheese and sautéed onions, add sweet and spicy bacon for a little extra kick for an additional charge.
- Ninang's Beef Lumpia (2 Oz Cooked)$6.00Wheat, eggs, and soy. Our family was mixed and my Ninang was concerned the kids might not like Filipino food so she figured American kids like hamburgers and created a beef egg roll. Beef braised with garlic and mushrooms and stuffed with Artikaas truffle Gouda cheese. Recommended sauce: sweet and sour.

This version was inspired by a trip to the Philippines visiting restaurants with the best lumpia in the world according to TasteAtlas. Pork and shrimp are braised with garlic and onions then finished with green onions. Recommended sauce: sweet, sour, spicy sauce.

- Turon$3.00This classic dessert lumpia is served with a contemporary twist often seen in the Philippines. We use banana rolled in sugar and cinnamon in lieu of plantain and stuff between the bananas homemade ube halaya (jam) and add jackfruit before wrapping it in lumpia wrapper and covering it in a homemade caramel sauce.
- Turon and Ice Cream$8.00Beat the heat with this Filipino classic. Turon with caramel sauce and a scoop of ice cream (choose between ube, mango, coconut, corn).

The Lab

It will be a rotating menu of things we try that are not lumpia but are lumpia "Adjacent".- Loube Toast$5.00Fresh hand grated ube on toasted croissant loaf with honey peanut butter and your choice of Driscoll's sweetest batch strawberries, banana, or jackfruit blanched in coconut water.
- Chinito's Churrito's$2.50Working many kitchens, a common nickname for me was "Chinito". Take cripsy thin lumpia wrappers and deep fry it then toss it in cinnimon and dark brown sugar for a perfect merienda (snack).

The most common sawsawan for lumpia in the Philippines. Every street vendor has their version of it and this is the most basic version of it. The acidity of this sauce brightens the lumpia, especially the Mom's lumpia. Beauty in simplicity.
- Sweet & Sour Sauce$0.75All the best lumpia's places in the Philippines serve a sauce made in house. We make our sweet and sour sauce in house every week. This sauce is pineapple and coconut, soy and sugar.
- Sweet, Sour, and Spicy$0.75A spicy, savory, sour sauce a trifecta that has a kick. We use spiced coconut vinegar then kick it up a notch with serrano pepper. Then give it umami with oyster, soy, and tomato sauces. This has heat, not so much it's unbearable but if you are sensitive to spice get a glass of milk.
