Nihari are tender cuts of beef shank cooked with onions, garlic, ginger, and a variety of spices such as cumin, coriander, cloves, cardamom, and garam masala. The meat is simmered for hours in a thick, flavorful broth until it becomes melt in your mouth soft. The addition of wheat flour or Nihari masala helps thicken the gravy, giving it a rich, luxurious texture.
