Our entrees slow smoked in our commercial wood smoker. We use Almond Wood depending on the entree to be smoked. We had a special feature built into our smoker that stops the smoking on a thermostat timer and then holds the heat at 150 degrees. This ensures we do not over cook our Pit Menu.
