I set out to make chicken piccata at my home. After pounding out the breasts I discoveed I had no flour but I did have a bag of corn chips. So I decided to make a favorite, tortilla crusted chicken with a flour dredge, egg wash, and a crushed chip crust. But wouldnt you know I didnt have any eggs. So I looked deeper. In the back of the fridge I spotted a bottle of ranch dressing. I thought perhaps the ranch could substitute for the egg and bind the corn chips to the chicken. So I coated the chicken lightly in ranch and tossed them in a bowl of crushed chips. I pan fried the coated chicken in a generously oiled saute pan and sprinkled each with a chedder colby cheese blend and served it over some buttered cilantro mushroom angel hair pasta finished with lemon juice (you cant see the pasta in thes pictures but they're underneath). I was skeptical when I started but as I pulled the chicken from the pan I thought to myself, "Hey these look prety good". And, sure enough, they were deeeelish. And voila, a new dish for the meal prep menu. I'm sure I'm not the first person to prepare this entree but since it came to me as I tried to remedy an incomplete recipe, I'm going to call it mine until someone sends me a cease and dismiss letter. Trust me, this is a great entree.
