The gluten-free version of our signature vanilla wafer cake is finally here. It is still created using cookies, but we use gluten-free vanilla wafers in this one. Just like our standard vanilla wafer cake, our gluten-free version includes raisins, shredded coconut, pecans and dried cranberries. The recipe has been in our family for over 30 years and we’re happy to share it with you. Our gluten-free vanilla wafer cake is just as versatile as the original vanilla wafer cake. We can still add or remove almost any ingredient and chocolate chips are still an option. In creating a gluten-free version of our vanilla wafer cake, we’ve made sure not to sacrifice the wonderful taste that people have loved for years. When ordering your cake, select ‘Yes’ or ‘No’ for each cake option listed. Each vanilla wafer cake can be customized to include up to two ingredients not listed here. If you would like to customize your cake with ingredients not listed (i.e. Dried oranges, lemon extract, caramel), select ‘Yes’ under Other Ingredient #1. If you would like to include two different ingredients, select ‘Yes’ under both Other Ingredient #1 and #2. After selecting “Yes,” you will then be prompted to type which ingredient you would like to be added to your cake. Each personalized ingredient is an additional $3. If your ingredient request cannot be accommodated, we will inform you through e-mail and work with you to bake a cake that is suited to your needs and taste. A portion of the proceeds from each vanilla wafer cake sold will go to benefit epilepsy and neuroscience research through the Miami Children’s Health Foundation (MCHF). The MCHF is the charitable arm of Nicklaus Children’s Hospital – the hospital Christopher spent so much of his life in as a child. Their doctors and facility were always wonderful to Christopher and took great care of him and our family. It’s with great joy we donate to The Miami Children’s Health Foundation because while we could never truly repay Nicklaus Children’s Hospital for all they did for us, we can help another child or family battling epilepsy.
