We all agree over here at A la Luna that if we didn't have to sell the food to stay in business, we would just eat lamb tacos all day every day. This one starts out grinding dried chilies to make a flavorful paste called "Adobo." We then rub down the lamb shoulder with this paste and cook low and slow until unctuous and tender. The combination of the salsa, beans, carrots, garlic, pumpkin seeds, and lamb is a play on textures and flavors that will impress even the harshest critics.
